ABSTRACT
Soyabean (Glycine max) and African breadfruit (Treculia
africana) are excellent sources of protein. However as investigations into the
brewing potential of sorghum continue, its biochemical and physical
deficiencies have become noticeable. Sorghum wort was found to contain
significantly lower level of nitrogen in the form of amino acid to achieve a
good yeast growth and rapid fermentation. The use of soyabean and African
breadfruit to supplement the low nitrogen content in sorghum wort was studied.
Infusion mashing method was employed. A ratio of 10:1 of sorghum grist to
soyabean cake and breadfruit cake was adopted. The result obtained indicates
that free alpha amino nitrogen content of 187.10mg/L (soyabean) and 162.42mg/L
(breadfruit) within specification (150-l9Omg/L) werthe recorded against
145.5mg/L which was obtained from sorghum wort. The fermentability of the
sorghum wort produced w increased from 40.56% to 60.32% and 64.62% when using
breadfruit cake and soyabean cake respectively. The use of soyabean and
breadfruit as nitrogen source in sorhum wort should therefore be encouraged. In
the sensory characteristics accessed, samples supplemented with soyabean gave
the best characteristics.
