ABSTRACT
Pearl millet Pennisetum glaucum (L) seeds were
soaked in deionised water 12, 24, 36, and 48 hours respectively, dried in an
oven at 60°C and milled. Un-soaked pearl millet served as the control.
Proximate composition such protein, moisture, fat, crude fibre, ash and
carbohydrate contents were carried out. The mineral contents analyzed include
potassium, calcium, magnesium, phosphorus and sodium. Some antinutritional
factors such as tannins, oxalate, trypsin inhibitors and phytate were also
determined in both soaked and un-soaked pearl millet. From the result obtained,
soaking in water significantly (P~ 0.05) reduced the ash contents of the pearl
millet from 2.29% for raw samples to 1.18% for samples soaked for 48 hours. The
crude fibre contents of the pearl millet also decreased significantly (P ~
0.05) from 1.06% for the raw sample to 0.74% for the sample soaked for 48
hours. Soaking increased the moisture content significantly (P 0.05) and all
the mineral contents analyzed, increased with soaking time. Anti-nutritional
factors analyzed also decreased with the soaking time. The study showed that
the use of soaking as a method of preparing weaning foods should be encouraged.
