Comparative Study On The Chemical Constituents Of Five Frozen Fishes Vended In Borokiri Market, Rivers State:- Ohaeri, Fortune C
ABSTRACT
Comparative study on the chemical constituents of
five frozen fishes vended in Borokiri market, Rivers state was investigated.
The total volatile nitrogen, heavy metals and proximate composition of the
fishes were evaluated. The fish specimens were collected, beheaded, gutted and
the edible sections were selected for analysis using standard analytical
procedures. Data generated were statistically analysed by one way analysis of
variance using SPSS (version 23.0). The proximate composition of the fish
samples analysed shows that crude protein content ranged from 20.00 to 25.01%,
fat ranged from 19.32 to 23.34%, crude fibre ranged from 0.32 to 0.61%,
carbohydrate ranged from 0.40 to 0.90%, ash ranged from 1.18 to 2.18% and
moisture content ranged from 50.0 I to 57.29%. Heavy metal content of fish
samples analysed shows that copper ranged from L.11 to 1.76 mg/kg, zinc ranged
from 0.11 tc, 0.26 mg/kg, lead ranged from 0.04 to 0.18 mg/kg and cadmium
ranged from 0.04 to 0.13 mg/kg. Total volatile nitrogen content of the fishes
ranged from 12.60 to 29.45 mg/kg. Maximum residue limits (MRL) of the heavy
metals and total volatile nitrogen as stated by World Health Organization and
Federal Environmental Protection Agency Nigeria were found not to be exceeded.
