ABSTRACT
Four sample seeds of
African yam bean were bought from four markets in Abia state (Ohafia main
market, Akara market in Isuikwuato, Ubani main market in Umuahia and Ndoro
market in Jkwuano) were subjected to dry heat treatment for 5, 1 0, 1 5 and 20
minutes and analysis were carried out on the proximate composition of the AYB
samples. Dry heat treatment (toasting) significantly reduced ash content of the
four AYB from 1 .15% for untoasted to 0.03% for toasted, the fat content of the
four AYB reduced from 1 .70% for untoasted to O.06% for toasted. Crude fibre of
the four AYB also reduced from 2.50% for untoasted to 0.50% for toasted, while
moisture content of the AYB seeds significantly reduced from 8.3 0% for
untoasted to 3.00% toasted. Protein content of the four AYB seeds reduced from
16.83% for untoasted to 7.67% toasted. The reductions in ash, fat, crude fibre,
