ABSTRACT
Two varieties of sweet corn (DRM
leser yellow and Oba super 4 yellow) were canned using USDA home canning method
Proximate, mineral, vitamin, microbial load, sensory properties, starch, sugar,
and total carotenoid of canned sweet corn were compared with commercial canned
sweet corn. The products had proximate compositions varied from 33.72% to
35.12% for moisture, 3.89% to 3.90% for ash, 2.06% to 2.08% for fibre, 10.42%
to 10.62% for protein, 4.395 % to 4.49% for fat, 43.99% to 45.28% for
carbohydrate. Mineral content of canned sweet corn varied from 10.69 mg/lO0g to
13.36 mgll0Og for calcium , 8.00mg/100g to 9.60mg/100g for magnesium,
54.03mg/100g to 54.43 mg/100g for phosphorus , 871% to 878% for
sodium,123.475to 130.40% for potassium 1.44mg/100g to 2.205 mg/100g for iron.
vitamin A ranged from 108.72mg/100g to 112.41 mg/100g ,vitamin C ranged from
11.l2mg/100g toll.73mg/l0Og, vitamin E ranged from 2.02mg/100g to 2.24mg/100g ,
bacterial load ranged from 17.67 cfu/g to 32.00 cfu/g while, fungi load ranged
from 6.33cfu/g to 6.33cfu/g .the result of sensory evaluation based on the
nine-point hedonic scale showed that canned sweet had taste 7.05 to 7.30, aroma
6.59 to 7.05, colour 6.85 to 7.60, appearance 7.03 to 7.21, general
acceptability 7.10 to 7.11, sugar range from 6.39 to 6.62, starch range from
7.29% to 7.66% , total carotenoid ranged from 211.77g/100g to 215.26jig/100g.
