ABSTRACT

Different flours of acha soybean and coconut were blended in the ratios of 70:20: 10(acha. roasted soybean and coconut) sample I - 70:20: 10(acha. boiled soy bean and coconut) sample 2 60:30: I 0(acha. roasted soybean and coconut) sample 3. 60:30: 10(acha. boiled soy bean and coconut) sample 4. 40:40:20(a cha. roasted soy bean and coconut) sample 5 and 40:40:20(acha. boiled soybean and coconut) sample 6. Nestle Cerelac a commercial complementarY food was used as the control. Thcsc samples cre evahiated for proximate composition, minerals, vitamins, microbial load, functional properties and organoleptic properties. The results indicate that the moisture. ash. fibre and carbohydrate values were higher in the formulated samples than in the control (Nestle Cerelac). There was no significant dif6rcnccs (p>O.OS) in the crude protein content of sample 6 (40% acha. 40% boiled soybean and 20% coconut) (15.42%) and the control (15%) while the rest of the samples were lo\\erin protein content (han the control ranging from 4.33 — 13.97%. The rcsults also indicate that Vitamin A content were significantly differences (p<0.05) in the samples and the control (Nestle Cerelac). There was no significant differences (p>O.OS) between samples I and the contol (Nestle Cerelac) in Vitamin ft. There were significant differences (p

<:O.05) in the bulk density. gelation capacity. pH and gelation temperature and the values were higher in the control. •[he gruel prepared for the sensory evaluation shows that sample 4 (60% acha. 30% boiled soy bean and 10% coconut) and sample 6 (40% acha. 40% boiled soybean and 20% coconut) were more accepted than the other samples as compared the control. The microbial load count of the samples were lower than the acceptable level (I .0 x I 0) for weaning food and this made the samples fit for consuml)tlon. The result showed that saniple 4 (6t)% acha. 30% boiled soy bean and 10% coconut) and sample 6 (40% acha. 40% boiled soybean and 20% coconut) are nutritionally adequate to Support child growth and that the other samples may be used as breakfast meal for adult.>
