ABSTRACT
This work elucidate the proximate
composition and anti-nutritional factors of fluted pumpkin pulp. This is with a
view at looking out its possibility to the usefulness of the pulp as a food
source. Proximate analysis carried out showed the following: Moisture 88%, Ash
1.22%, Fibre 1.84%, Ether extract 5%, Protein 2.82% and carbohydrate 1.12%.
From the result, it shows that the pulp is not a rich source of mineral and the
carbohydrate content which is low could not be used as a source of energy.
Anti nutrient evaluation showed Phytate Content at 38.4mg/lOOg, Oxalate
63ing/lOOg, Cyanide 2.73mg/lOOkg, Tannin 4.61mg/bOg, and Alkaloids 24mg/b0g
which were in excess dosage could be worrisome and can present a nutritional
problem when consumed. The potential for the utilization of the pulp is
possible in food system if something is done through processing to reduce the
anti-nutrient factors.
