ABSTRACT
Food is a chemically complex matrix,
and predicting whether, or how fast, microorganisms will grow in any given food
is difficult. Most foods contain sufficient nutrients to support microbial
growth. Several factors encourage, prevent, or limit the growth of
microorganisms in foods, the most important are water availability, pH, and
temperature, Radical dietary shift in many developed and developing nations are
supplanting traditional patterns of eating with a western diet high in animal
meat products and refined carbohydrate and low in whole grains, fruits and
vegetables. (Makukutu and Guthrie, 1986; Smith and Fratamico, 1995, ICMSF
(eds), 1996) and Frank et al. (2008).
