ABSTRACT
The microbiological, nutritional,
and sensory qualities of laboratory processed and hawked zobo drinks in Michael
Okpara University of Agriculture were evaluated. The samples were stored at
ambient temperatures for 4 days. The sample from COLPAS with the highest p1-I
(3.6 1±0.03) had the highest number of microorganisms which is 6.00x104 cfu/ml for
total viable count and 4.60x104 cfu/ml for total fungal count for the period of
storage under ambient temperature. But the sample CR (control) with the lowest
pH (3.07+0.08) had the least microorganisms. The crude protein content of the
hawked zobo drinks and that of the control were not significantly different (p
