ABSTRACT
The researcher embarked on this study owing to the need to
integrate the preparation and service of local delicacies in food service
operation. The study became necessary since many countries and regions are
continuously strategizing and devising means of dislodging tourism pulling
countries and taking Over from them their guests/tourists. The researcher reasoned
that local delicacies could be used as a strategy in boosting tourism trade.
Three research questions were formulated for the study which took place in
south eastern Nigeria. One hospitality organization each was taken from three
out of the five south eastern states for the study. The guest of the
organizations formed the population for the study. A survey design was used. A
sample of 300 guests was used in all. 300 copies of questionnaire were
distributed and 200 copies were returned. Frequencies and Simple Percentages
were used to analyze data generated, the findings showed that some tourists
visit the south eastern Nigeria mainly to have a taste of their local delicacies
and local delicacies also play the role of attraction. Recommendations were
given, to effect that local delicacies should be encouraged, promoted and
introduced fully in food service operations.
