A food is considered fermented when one or more of its constituent is acted upon by microorganism to produce a considerably altered final product acceptable for humap consumption. Fermented foods contribute to about one-third of the diet worldwide and cereals are the important substrate for these · · products in all parts of the world. Rice which is a cereal is used as a raw material for the production of fermented snacks such as masa, kenkey because it offers a relatively good puffy quality with bland flavor suitable for coating ·with a number of flavorings (Matz, 1984). It has been confinned that a typical crispy and dense texture with milder flavor and colour could be achieved by utilizing rice. '1n c.ddition, rice makes snacks to secure integrity during 'storage (Matz, 1984). Although rice contains less protein (8.5%), chemical scores of protein was discovered to be 64.
