ABSTRACT

This study was carried out to determine the glycemic index (GI) of four varieties of rice namely- FARO 44, FARO 51, FARO 52 and NERICA 1. To determine the glycemic index (GI), fixed portions of food containing 50g of carbohydrates were consumed by 12 healthy volunteers. Finger-prick blood samples were investigated at 30 minutes interval over a 2-hour period after the meals (the beginning of the food intake was time zero, 0). Blood glucose (B-glucose) curves were constructed using Bglucose values at times 0, 30, 60, 90 and 120 minutes after the meals. The glycemic index (GI) was calculated by dividing the Incremental Area Under the Curve (IAUC) for the tested food by the Incremental Area Under the Curve of the standard food (IAUCS). The glycemic index (GI) for each tested food was calculated as the mean from the respective average GI values of the 12 volunteers. The results were 75 for FARO 52, 77 for FARO 44, 88 for NERICA I and 98 for FARO 51. There was no significant correlation between the incremental area under the curve (IAUC) of the four rice varieties and the IAUC. of bread. This study showed that the long grain varieties, FARO 44 and FARO 52 had the least glycemic index (GI) values and that white rice is not suitable for use as a standard food in determining the glycemic index value of foods.
