ABSTRACT

Seeds African breadfruit (Treculia africana) were parboiled and manually dehulled to produce wholesome seeds. Physical parameters of the seeds (length, width, volume, weight, and density) were taken. One kilogram of undehulled seeds was stored for 20 days in a traditional wooven basket at ambient temperature. The dehulled African breadfruit seeds milled into flour and the proximate composition were determined. Cooking timc,physical and sensory parameters were also determined. Effects of storage on the cooking time of the seeds were determined. Cooking time ranged from 46.00 to 68.00 mm. African breadfruit flour stored for 20 days had higher moisture content of (12.76%) compared to 1 0.] 4% fresh seeds. The breadfruit seeds stored for 20 days had lower ash, crude fibre, fat, crude protein and carbohydrate contents (3.46, 2.81, 3.95, 15.83 and 61.16% respectively), compared to fresh seeds. The physical parameters (length, width, volume, and weight) decreased as the storage period increased. There were significance differences (P<0.05) in appearance, taste, aroma, texture and general acceptability with storage. The most important lactor affecting holding time and cooking time was the loss of moisture causing shrinkage of sccd. >
