ABSTRACT
The Effect of
different drying methods on quality of cocoyam (Xanthosoma sagitifolium anti
Colocassia esculent of cocoyam) flakes was also studied. Their proximate
compositions, antinutritional factors (ANFs) were studied. Proximate
composition showed that moisture content ranged from (7. 1 3%-I 3. 10%). and
Ash content from (3 1 6%-6. I 9%). l'at content from (0.92%-1.08%). Fibre from
(1.24%-1.28%), Protein from (5.17%-5.96%) and Carbohydrate
(74.32%-79.32%).There was significant differences (p
