ABSTRACT
Three fruits: Orange, pawpaw and tomatoes were obtained, cleaned, washed, cored and crushed into pulp. The various fruit pulps were then treated with alum at different concentration O.25g, 0.5g. ig, Enzyme (pectinase) at 5m1, lOml and 15m1 respectively and electric current of 220v at different timing of 5mins, lOmins, I 5mins. After the treatments, each juice was obtained by filtration using a Muslin cloth. The juices obtained were evaluated for pH, colour and ascorbic acid retention. The use of Alum and Enzyme (pectinase) gave higher yield of filtrate while sample treated with electric current gave the lowest yield. The enzyme treated samples retained their natural colour while samples treated with Alum became light in colour and samples treated with Electric current gave a dark and unacceptable colour. There was a drop in the pH of the juices. The juices from pulp treated with alum and enzyme retained their ascorbic acid content while that from pulp treated with Electric current lost all it's vitamin C content.
