Production, Fortification And Evaluation Of Instant Maize And Millet Ogi With Okra Seed Meal

ABSTRACT

Maize, millet and okra seeds were purchased and processed. The okra seed meal was blended with the instant Ogi from millet and maize in different proportions such as maize with Okra (90:10%), Maize with Okra (80:20%), maize with Okra (70:30%) and millet with Okra (90:10%) millet with Okra (80:20%) millet with okra (70:30%), while maize (100%) and millet (100%) were used as control samples. Proximate composition, functional proprti.es, vitamin and microbial analysis were carried out on each blend. Sensory evaluation was also carried out using twenty panelists. The result showed that there was no significant difference in general acceptance of the sensory scores of the samples. Sample of maize with okra (80:20%) was found with protein of about 12.56%. Microorganisms identified were bacteria, fungi and mould.
