ABSTRACT xi Monosodium glutamate, the sodium salt glutamate, is a flavor enhancing food additive that may be present in packaged food without appearing on the label. This could lead to unintentional consumption of monosodium glutamate in low or high concentration. The study is aimed at investigating the mineral and vitamin content of M.Indica seed and its effect on some kidney function parameters (urea, creatinine and albumin) in normal and intoxicated rats. Thus, monosodium glutamate at a dose of 8mg/g body weight was administered to adult male albino rats with body weight of 104-170kg by oral intubation. Treatment was daily for 14days (2weeks). M.Indica seed was shown to be rich in vitamin A (18.94mg/100g), C (377.66mg/100g) and E (2.27mg/100g) which are antioxidant vitamins also in Minerals like Zinc (201.19mg/100g), Iron (90.66mg/100g) and Sodium (390mg/100g) which are essential for normal body function. The serum chemistry results showed that rats exposed to the extract alone had significance (p<0.05) increase in albumin concentration when to the normal group and a significant (p<0.05) decrease in urea and creatinine concentration when compared to the normal group. Histopathological examination ofthe kidney showed a mild to moderate multifocal degeneration of the renal tubular epithelial in the cortex and inner medullar ofthe MSG group when compared to the Normal and Extract group which showed a normal histo-architecture for laboratory rats. The present study revealed that administration of M.Indica seed provided significant protection to kidney from toxicity induced by MSG, probably due to the Mineral and vitamin content in the M.Indica seed
