Microbial Quality Of Soymilk Sold In Umuahia Metropolis

ABSTRACT
The microbial quality of soymilk was studied, the microbial counts for bacteria, coliform and moulds were 1.8 x 105x 10 5 cfu/ml, 1.2 x 105 3.0 x 106 cfu/ml and 1.2 x 10 to 6.0 x 106 cfu/ml respectively. Escherichia coil and staphylococcus aureus was detected in all the samples. Other bacteria includes Lactobacillu, klebsiella and bacillur species. The fungal isolates were mainly Aspergillus species and PenicillIium species. The microbial isolation detected, reflected poor hygienic standard of production, constituting a public health hazard among the populace. The proximate analyses of the samples were also determined. Soymilk production requires proper monitoring and quality control measures.
