ABSTRACT

 Lemon grass; which belongs to the Poacae family, which has been found healthy for human consumption was extracted, using aqueous and methanol solvents, this was done to evaluate which of the solvents was a better extractant, the extract was used to determine the phytochemical constituents and antioxidant properties of the sample. Dry, ground lemon grass and root was also used to determine the vitamin and proximate content of the sample. The absorbance was read using a IJV Spectrophotometer.
