Development Of Malt Extract From Fonio (Digitaria Exilis)

ABSTRACT
Digitaria exilis (fonio) was evaluated for its malting characteristics. Parameters such as proximate composition and germinative characteristics were also evaluated. Results obtained showed that fonio has good germinative properties with a Germinative energy of 82%, a Water sensitivity value of 7.70% and a Malting loss of 10.40% and can be malted with minimal loss. The Cold and Hot Water Extract yield was 5.4 1% and 63.70% respectively. The Free Amino Nitrogen level (126mg/I) was acceptable and the Diastatic Power was found to be 14.82°WK. Proximate composition of the grain and malt shows a significant increase in protein content from 6.60% to 8.62% at P<0.05 after malting. There were significant decreases in carbohydrate content from 7 1.34% to 70.65%, Fat content from 1.43% to 1.33% and ash content from 3.82% to 3.44%. Results indicate that fonio can be used in brewing and in various food formulations. >
