ABSTRACT

Cyanogenic potential and partial purification of p-glucosidase was carried out on cassava cultivar TME 419 and other processed cassava food using acceptable chemical methods. Extraction using acetate buffer and precipitating with ammonium sulfate S04) gave a partially purified enzyme with enzyme activity of4.5 unit/ml and specific activity of 1.248 unit/mg protein. Using the protocol B method for total cyanide determination, the following was found to be the total cyanide distribution in both wet and diy peel, pulp and leave (120.78ppm, 26.14ppm and 75.24ppm) and (25.34ppm, 53.46ppm and 24.16ppm) respectively with carotenoid value of 7mg/g in the pulp ofthe cassava cultivar TME 419. The protein content ofthe partially purified enzyme was 3.6038mg/ml
