ABSTRACT

The nitrite, nitrate and N - nitrosamine content seven brands of commercially available fruit juices was investigated. Three sets of the seven brands of fruit juices were purchased band divided into three groups (1, 2 and 3). Groups one and two of the fruit juices were exposed daily to continuously sunlight for two weeks while group three ( control) was maintained at room temperature. The concentration of nitrite for the sunlight-exposed fn.iitjuices were 2.45 ± 0.14, 2.62 ± 0.14, 2.36 ± 0.04, 2.16 ± 0.02, 2.41 ± 0.07, 2.52 ± 0.06, 2.46 ± 0.02 g/ml for the Juices while that of the control was 2.00, 2.18, 2.05, 2.14, 2.21, 2.11. Nitrate and N-Nitrosamine was not detected in the fruit juice sample of both the exposed and unexposed samples. The results are discussed from nutritional and toxicological points of view.
