ABSTRACT

Soya milk, V-fresh, Vita milk, Soy oil (grand and royal soy Oil) and Soy flour (S1 , S2, S3) from different processors in Abia State were purchased in Abia State main market. Analyses were carried out on thee samples to determine-their qualities. Among the analysis carried out include Proximate, Anti nutrients, physicochemical properties, vitamins and microbial analysis. The result obtained from proximate analysis showed that the soy flour (S1 , S2, S3) are higher in Protein, fiber, carbohydrate, and ash with the values, 40.37-42.59.33.84-4.07.17.86-21.59, 4.83- 6.17 respectively. The soy flours samples were also higher in vitamins A and C (8.24-9.08, and 6.22-6.82). It was observed that level of anti nutrient in soy flour were higher than in soymilk especially the hemagglutinin and trypsin inhibitor (7.26-8.36 and 2.93-3.78) respectively. The microbial analysis of soy products indicated the presence of Bacillus cereus, Streptococcus faecalis ,Rhzopus spp,and Penicillium spp. The soy oil sample showed that the oil contained some impurities which was indicated from the analysis result.
