ABSTRACT ix This research work determined the quantity of cyanogenic glycoside.(HCN) ofmarketed garri samples sold at both rural and urban markets located at different Local Governments areas in Abia state: Umuahia north, Isiala ngwa north and south, Aba north, Ukwa west, Ohafia and Ikwuano. It also shed light on the glycemic index of coconut gam a type of fortified garri enriched with coconut that has its contribution to metabolic stability to its healing capabilities; determining its safety level for consumption by diabetic and non-diabetic individuals. The cyanide and glycemic index result were subjected to Anova test for stastical analysis. The ? results showed that an average garri sample sold in Abia state contains cyanide, level of 23.9±4.2 and cyanide level of coconut garri contains an average cyanide level of 23.1±3.13. The results of glycemic index of coconut garri for control white sample 87.0±2.0, white 25% 77.9±3.8 and white 15% 80.1±9 all fermented for 48hrs. control white gave glycemic index of 77.9±8.8, white 25% 86.0±9.3, white 15% 75.8±3.0 all fermented for 72hrs respectively. The cyanide result was compared with the safe level 1 Oppm authorized by WHO and it is found to contain high level of cyanide. The glycemic index result was also compared with ranges of glycemic index and its apparently high as well. Cyanide level is established to be high and • could cause various disorders such as konzo, goiter and cretinism. The high glycemic index can as well instigate diabetes, cardiovascular diseases, obesity which are all dangerous to healthy living. The results from this study therefore established unsafe level of cyanide in marketed garri samples in Abia state and high glycemic index of coconut garri.
