ABSTRACT v The purpose of this study is to assess the antifungal properties of Daucus carota sativus and the effect of the extract on the electrolyte status of monosodium glutamate intoxicated albino rats. 30kg ofDaucus carota leafwere bought fresh, sorted by removing extravenous material, dried, using air drying at temperature of 45°c for one week. 9kg of the dried vegetable were ground using electric grinder (type RETSCH). A half of the ground vegetable was used to determine the antifungal properties of the vegetable while half were used for ethanol extraction. Twenty male adult albino rats (120-180g) were divided into five groups on the basis ofthe body weight. The control group (Group E) received ordinary feed and water. The MSG group (Group A) received water and monosodium glutamate (8000mg/kg dose) and feed. Group B (Extract Group) received the Extract (300mg/kg dose), feed and water. Group C received low concentration of the extract (200mg/kg) and (8000mg/lg of MSG). Group D received high concentration of the (100mg/kg/ dose) and MSG (8000mg/kg). Rats in all the groups allowed free access to feed and water. On day fifteen, the rats were sacrificed and the blood used to assay for Calcium ion, sodium ion, Potassium ion, biocarbonate ion, Chloride ion concentration. Result of the study showed that the ethanolic extract of carrot whole leaf (Daucus Carota sativus) affected the electrolyte status as shown by the increased in biocarbonate ion (HCO3), Potassium (K) and calcium in the extract group when compared with the normal.
