ABSTRACT
Yam popularly called “Jz" in Igbo Language and “zsiz” in yoruba is a good source ofvitamin B6, a tropical crop belonging to the Family Dioscoreaceae in the genus Dioscorea. There are about 600 species out of which six are economically important staple species. These are: Dioscorea rotundata (white guinea yam), Dioscorea alata (water yam), Dioscorea bulbifera (aerial yam), Dioscorea esculanta (lesser yam), Dioscorea dumetorum (bitter yam) and Dioscorea trifida (cush cush yam), Out of these, Dioscorea rotundata (white yam) and Dioscorea alata (water
