ABSTRACT
This study explored the quality
assessment of functional Jams produced from selected tropical fruits pawpaw
(Carica papaya) pineapple (Ananas comosus), orange (Citrus sinensis) and banana
(Musa acuminata). Jams were produced from each ofthe fruits and 5% pectin
added. The Proximate, physicochemical, vitamin, antioxidant activities and
sensory evaluation were carried out on the samples. Results obtained showed
that, the proximate composition ranged from 38.85- 86.42% for moisture. 0.23-
3.19% for protein, 0.15 to 0.95% for fat, 0.61-2.21% for fibre, 0.48 to 1.30%
for ash. 46.91 to 56.78% for carbohydrate contents and 49.13 to 234.56 Kcal for
energy value. lyleanwhile. the Physicochemical analysis showed that pH ofthe
Jams ranged from 3.22 to 8.83%, titratable acidity ranged from 0.12 to 1.09%,
total solids ranged from 13.59 to 61.51%. specific gravity ranged from 0.87 to
0.99, viscosity ranged from 0.95 to 2.61 mPa.s and °Brix of the jams was in the
range of 68.02 - 74.02°Brix. vitamin content ranged from 21.62 to 195.02pg/100g
for carotenoid content, 0.03 to 2.37 mg/100 g for vitamin Bz, 0.23 to 1.22
mg/lOOg for vitamin B3, 0.11 to 0.95 mg/lOOg for vitamin Bo, 37.40 to 63.32
mg/100 g for vitamin C. 0.33 to 1.72mg/100g for vitamin E and 0.15 to 5.82
mg/lOOg for vitamin K. Antioxidant analysis showed that DPPH ofjam samples
ranged from 8.25% to 88.02% while FRAP value ranged from 3.68 to 5.29
mmol.AAE/g. Sensory evaluation showed that Jam produced from pineapple was best
rated by the panelists with the highest score (8.32) and was liked very much by
the panelist. Conclusively, functional Jam produced from selected tropical
fruits should be valued as a dietary source for developing healthier products
