ABSTRACT
This study investigated the proximate
composition offresh and frozen Clarias gariepinus and Heterobranchus longifilis
of different sexes oflive fish ( average weight of 1.4.±05.0 kg) that were
slaughtered and frozen. Fresh fish samples were selected before preservation
for chemical and microbial analyses using standard analytical procedures for
proximate composition,and the fluorescence microscopy for the Microbial
load.The statistical analysis showed that there was significant difference
(p<0.05) with increase in post-slaughter time interval in the microbial
development for the fresh fish samples. Bacterial isolates identified from
fresh samples included: Escherichia coli, Klebsiellapneumoniae, Pseudomonas
aeruginosa,Bacillus spp and Staphylococcus aureus. Protein, moisture, and ash
contents offrozen fish samples decreased with increase in storage period while
on the contrary, lipid and caloric values increased as the storage period
increased that is to say that duration ofstorage affect the nutrient
composition ofthe fish except in lipids and caloric values. This study suggests
that C. gariepinus and H.longifilis should be frozen immediately after
slaughter and they should not be prolonged during storage for best quality fish
products.
