ABSTRACT

African breadfruit was processed into flour and used to.supplement wheat flour, in .the percentages of 10,20,30,40,50,100 for cake production .The proximate and sensory . . analysis of the African breadfruit flour and wheat flour composite cake samples were done to determine the nutritional contents and the general acceptability of the composite cake as compared to the pure wheat flour cake. The analysis revealed that the crude protein, crude fibre ~nu fat contents of cake produced from 100% African breadfruit were higher. The sensory analysis showed that cake with 10% supplementation of breadfruit flour was acceptable. However cake with more than 30% breadfruit composite was not generally acceptable. The physical analysis showed that . cake produced from 100% African breadfruit flour and 100% wheat flour had the same' weight. The proximate results also revealed that cake produced from composite 50%:50% had the lowest moisture content and can store for long time. Therefore microorganism will not grow very fast in it. The microbiological quality were evaluated. Their counts ranged from 1.1 0 to 2.80.
