ABSTRACT
The phytochemical, mineral and vitamin
composition oftisane from blends ofsoursop (Annona muricata'), lemon grass
(Cymbopogon citratus) and guava (Psidium guajava 1.) leaves were studied. Fresh
leaves of soursop, lemongrass and guava were independently processed into
rowders. Three different samples coded 101, 102 and 103 were obtained from a
combination of he soursop, lemongrass and guava powder blends at the ratios
of40:30:30, 30:30:40 and 30:40:30, ■espectively. The samples were subjected to
mineral, antioxidant, vitamin, phytochemical and ;ensory evaluation analyses
using standard methods with known commercial tea, Lipton (sample 100) serving
as control. The mineral composition of the tisane samples ranged from 10.71 to
>50.14 mg/lOOg calcium, 6.54 to 126.64 mg/lOOg magnesium, 61.51 to 366.54
mg/lOOg jotassium, 0.26 to 5.08 mg/lOOg sodium, 2.68 to 10.08 mg/lOOg iron, and
1.50 to 7.56 mg/lOOg tine. The antioxidant activities ranged from 72.41 to
75.38% DPPH, 29.25 to 50.03 mgGAE/g ?RAP, 125.10 to 476.50 mgGAE/lOOg total
phenol, 90.22 to 185.17 mgGAE/g total flavonoid, md 37.21 to 601.02 pmolTE/g
ABTS. The vitamin composition ranged from 0.02 to 0.19 mg/100g ktaminBl, 0.04
to 0.39 mg/100g vitaminB2, 0.03 to 1.98 mg/100g vitamin B3, and 1.09 to 94.74
ng/100g vitamin C. The phytochemical composition ranged from 1.78 to 3.54
mg/lOOg tannin, .16 to 4.82 mg/lOOg flavonoid, 0.77 to 3.02 mg/lOOg alkaloid,
1.21 to 1.74 mg/lOOg phenol, and .02 to 0.37 mg/kg cyanide. The sensory
evaluation scores ranged from 5.50 to 8.00 for ppearance, 5.30 to 6.70 for
taste, 6.25 to 7.90 for aroma, 5.50 to 7.90 for colour, and 6.25 to 8.00 )r
general acceptability. The study concluded that a nutrient dense tisane could
be produced from lends of soursop, lemongrass, and guava leaves with sample 101
(40% Soursop: 30% Lemon rass: 30% Guava tisane) being the most accepted, hence,
tisanes from these herbal leaves should e commercialized as functional herbal
beverage for health-conscious consumers.
