ASTRACT

 The phytochemical composition and antioxidant properties of tisane from blends of soursop (Anona muricata) and Lemon grass {Cymbopogon citratus) leaves were studied. The leaves of soursop and lemongrass were processed into 5 different samples oftisane while commercial lipton served as the control. The different tisane samples including the control were subjected to phytochemical, vitamin, mineral and antioxidant analysis using standard methods. Significant differences (p<0.05) were observed on the phytochemical composition of the different tisane samples with mean ranges of 6.42 to 11.69 mg/lOOml tannin, 0.96 to 2.47 mg/lOOml alkaloid, 9.06 to 24.65 mg/lOOml phenol, 0.37 to 1.25 mg/lOOml trypsin inhibitor, 0.66 to 1.44 mg/lOOml amylase, 0.64 to 1.89 mg/lOOml hydrogen cyanide and 3.52 to 16.68 mg/1001 flavonoid. The vitamin composition results ranged from 0.85 to 1.56 mg/lOOml vitamin Bl, 1.08 to 2.68 mg/lOOml vitamin B2 and 0.59 to 1.13 mg/lOOml vitamin B6. The mineral composition results ranged from 356.74 to 921.10 mg/lOOml calcium, 187.60 to 345.60 mg/lOOml magnesium, 48.01 to 131.80 mg/lOOml sodium, 695.42 to 1706.48 mg/lOOml potassium, 7.53 to 16.42 mg/lOOml iron and 2.95 to 8.65 mg/lOOml zinc. The antioxidant activities ranged from 31.28 to 90.15% DPPH, 525.55 to 936.71 mg/GAE/lOOml total phenol, 264.06 to 511.23 mg/GAE/lOOml total flavonoid, 398.71 to 657.62 pMol/100ml FRAP and 307.14 to 594.60 pMol/lOOml ABTS. The sensory scores of the different tisane samples ranged from 4.69 to 8.29 appearance, 5.24 to 8.96 taste, 5.08 to 8.24 mouthfeel, 4.60 to 8.36 aroma and 5.12 to 8.60 general acceptability. The study concludes that the use of soursop and lemongrass in tisane production enhanced its nutritional and antioxidant properties hence, tisane production using these local herbal infusions should be encouraged in the food industry.
