ABSTRACT

Proximate composition, vitamin composition and mineral composition of the following nuts, Cashew nut Anarcadiun occidentafe) Walnut ('I 'efracarpidilnil conopho rum) and palm kernel nut (Rafia hookeri)wcre investigated using standard analytical methods. The proximate composition range in(%) was as follows: Moisture (45.8 1-6.35),Diy rnatter(93.66-54. 19) Ash(4.22-2 .87) Crude fibre (11.32-2.88)Fat extract(49.56-39.36) Crude protein(28 .60-8.69) and carbohydrate( 19.51-14.69) The mineral cornposition(mg/ 1 00g) of the nuts showed calcium(45.3 1-21.47),rnagnesiuin(6 1.92-28.68) sodium(37. 80-9.50), potassium(3 8.62-20.30), phosphorus( 19.25-5.78) and iron( 1 .45-1 .09). The vitamin composition, vitamin Bi (0.09-0.01), vitamin 132(0.08-0.03), vitamin C(5.28-1 .51), vitamin E(9.38-4.48) and vitamin A(3.76-2.46). 'flie investigations showed that the nuts are very nutritious and could be used in the prevention of the formation of carcinogenic substances and as a good source of' energy. They could also be used to alleviate impairments caused by lack of trace elements.
