ABSTRACT

The study examined the nutrient composition of dehulled and undehulled mungbean supplemented with hungry rice and crayfish in various proportions of their protein content. The mungbean, hungry rice and crayfish were dried at 90°c and milled. The result of the chemical analysis showed that the supplemented mungbean of sample c (undehulled mungbean, Acha, crayfish) (70:15:15) has approximately the highest proximate composition with moisture 10.27%, Dry matter 89.73%, Ash 5.33%, Crude fibre 7.31%, Fat 4.17%, Total protein 26.53%. There was a decrease in carbohydrate content 46.40%. Minerals arid vitamins composition, showed no significant difference among the samples (P>0.05) , except for sample A (undehulled mungbean, Acha) (70:30) which has the highest vitamin C content of about 13.76mg. The anti- nutrient content of the samples are not significantly different from each other (P<0.05) . This low anti- nutrient content of the samples is beneficial, since it shows that the samples are not deleterious to the health. it. can he deduced that the addition of crayfish and the presence of the hulls in mungbean can increase nutrient content.
