ABSTRACT
Four Inaugural
Lectures have been delivered at various times from the Department of Food
Science and Technology. These previous lectures addressed several aspects of
Food Science especially in the area of Food Security. This is not surprising
since the essence of our profession as Food Scientists/Technologists is to
employ scientific and engineering principles in ensuring availability of
nutritious, safe, convenient and sufficient food thereby advancing food
security (Onwuka, 2014). In my search for the focus of this inaugural lecture,
I was guided primarily by the need to bring to fore another approach apart from
increasing agricultural productivity, in remediation of food insecurity, which
has continued to be a global challenge. In spite ofimproving agricultural
productivity, the food security gap has not yet been closed, this brings a
query on how much ofwhat is produced actually get consumed?
