ABSTRACT
The nitrate, nitrite, N-nitrosamine and
malondialdehyde contents of 36 samples of meat and fish obtained from Umuahia
and Umudike, Ahia-state, Nigeria which comprises of twelve samples of suya (
charcoal grilled meat), twelve samples of dried fishes and twelve samples of
smoked fishes purchased from different markets situated in Umuahia were
analyzed. Nitrite was determined spectrophotometrically. Nitrate and
N-nitrosamine were also estimated spectrophotometrically after reduction with
cadmium and irradiation with U.V light respectively. In the survey of
malondialdehyde contents in meat and fish samples, it was also determined
spectrophotometrically. The suya sample from Orie-ugba and dried fish from
Isi-gate had the highest malondialdehyde values (0.096 and 0.145 g/g
respectively), dried fish from Orie-ugba and smoked fish from Ubani had the
highest values (0.536 and 0.561 µgig respectively) for nitrosamines, smoked
fish from Orie-ugba and Gate-6 had the highest values for nitrite (1.164 and
1.345 µgig respectively), while only a sample of suya from Isi- gate contained
nitrate (0.268 g/g). The results were discussed based from their toxicological
and nutritional point of view.
