ABSTRACT

 Okra (Abehnoschtis esculentus L.) belongs to the family Malvaceae. It originated from tropical Africa and was grown in the Mediterranean region. It is now grow in the warmer parts of the temperate regions (Abid et al., 2002). Okra is an important vegetable crop in much of the tropics including Nigeria. Young fruits are consumed fresh or cooked (Fajinmi and Fajinmi, 2010). Okra fruit can be dried whole or sliced and subsequently conserved. Before selling, the dried product is usually ground to a powder (Siemonsma and Kouame, 2004).
