ABSTRACT

Carotenoids and Phenolic contents of fresh and dried and powdered sample of' (our vaneties of sweet potatoes purchased at sweet potato farm of NRCRI Umudikè were estimated. Their carotenoid and phenolic content were estimated spectrophotometrically and colour evaluation. From the result, it was observed that the fresh sample of sweet potato had a higher content of carolenoids (Tis 86/0356 = 2.0l5ig/l00g, Ex-Igbariaiu = 2.75ig/l00g, Tis 8164 =0.25pgI100g and Tis 87/0087 = 0.15.tg/l00g). while the processed sample had a lower content of carotenoid (Tis 86/0356 =0.325ig!100g, Ex-Igbariam =O.385gIl0Og, Tis 8164 = 0.125tg/100g and Tis 87/0087 = 0.066pig/100g). The processed sweet potato showed a higher phenolic content (Tis 86/0356 18.80mg/lOOg, Ex-Igbariarn = 32.8lmg/lOOg, Tis 8164 =32.80mg/lOOg and Tis 87/0087 = 6.30mg/bOg). And the fresh sample has a lower phenolic content (Tis 86/0356 8.78mg/lOOg, Ex- lgbariam = 22.60mg/lOOg, Tis 8164 = 12.40mg/lOOg and Tis 87/0087 =5.17mg/i oOg). Colour changes occur when the fresh sweet potatoes were processed into powdered form. Enzymatic browning was observed when the processed flour was cooked in Pyrex glass and Aluminium pot.
