ABSTRACT
The bacterial contamination of snacks (ready to
eat foods) sold in Micheal Okpara University of Agriculture Umudike, Abia state
was investigated. A total of 10 different samples from 3 vending sites namely:
University cafeteria, MOUAU Gate six, and MOUAU food village were analyzed for
total viable plate count for pathogens. Microbiological analyses of samples
were done and microbes were identified by standard biochemical tests. The
quantitative analysis and biochemical tests showed that the snacks sample
contained a number of microorganism of which 16 isolates were identified. From
the results of standard biochemical tests, Bacillus spp (6.25%), Klebshiella sp
(12.5%), Escherichia coli (56.25%) , Proteus spp (6.25%, Staphylococcus aureus
(12.5%)) and Streptococcus sp(6.25%>) were identified from the different
samples of snacks. The highest plate count was found in egg roll (6.0*108
cfu/g), and the lowest count in biscuit snack (1.0 xlO1 cfu/g). The presence of
Escherichia coli which is an indicator of likely faecal contamination calls for
concern. Adoption of good manufacturing practice and hazard analysis critical
control point (HACCP) are necessary to preventing occurrence of food borne
illness as hygienically maintained food retained the best quality
