ABSTRACT

Anti-nutrients and Protein contents of Mung beans (Phaseolus aureus) were investigated using two species- China species (A) and Nigeria species (B)- in their unsprouted and sprouted states. In unsprouted species A, the contents of Tannin, Saponin, Alkaloid, Phytate, Stachyose and Raffinose in mg/100g were 0.26, 1. 06, 2. 47, 0.19, 0.24, and 0.06 respectively while trypsin inhibitor activity in TUI/100g and Haemagglutinin in HU/100g were 11.14 and 243.30 respectively. Cocentrations of Giucosidic, and Non- glucosidic Cyanide as well as Malondialdehyde in mg/100g were 1.15, 0.65, and 1.47 respectively. Protein content was at 22. 98%. In unsprouted species B, the contents of these compounds were 0.31, 0.84, 2.92, 0.21, 0.25 and 0.06 following the order above, and 8.36 TUI/100g and 207.2 HU/100g for Trypsin inhibitor activity and Haemagglutinin respectively. Glucosidic and Non-glucosidic cyanide as well as Malondialdehyde in mg/100g were 1.08, 0.56 and 0.28 respectively while Crude Protein was at 23.57%. For sprouted species A, the contents of Tannin, Saponin, Alkaloid, phytate, Stachyose and Raffinose in mg/100g were 0.25, 1.04, 2.35, 0.18, 0.22 and 0.06 respectively while Trypsin inhibitor activity in TUI/100g and Haemagglutinin in HU/100g were 8.37 and 209.7 respectively. Concentrations of Glucosidic and Non-glucosidic cyanide as well as malondialdehyde in mg/100g were 0.96, 0.51 and 1.12 respectively while Crude Protein was at 24.66%. In sprouted species B, the contents of these compounds were 0.29, 0.82, 2.77, 0.20, 0.22 and 0.06 following the order above and 8.37 TU1/100g and 209.7 HU/100g for Trypsin inhibitor activity and Haemagglutinin respectively. Concentrations of Glucosidic and Non-glucosidic Cyanide as well as malondialdehyde in mg/100g were 0.72, 039 and 0.226 respectively while Crude Protein was at 25.24%. From the on-going, sprouting reduces the toxicants while valuable nutrients such as Protein are increased in Mung Beans.
