ABSTRACT
This research examines the integration of local delicacies into food service operations in Afikpo, Ebonyi State, Nigeria, with a focus on its acceptability, challenges, and impact on customer satisfaction and business performance. Leveraging the unique culinary heritage of Afikpo, this study highlights the potential of local delicacies as a strategic tool for enhancing guest experiences, promoting cultural tourism, and driving economic growth. Utilizing a survey research design, data were collected from 260 respondents, analyzed through descriptive statistics and chi-square tests. Key findings reveal that local delicacies are moderately integrated into food services, with unique flavors and cultural authenticity being major drivers of customer preference and satisfaction. While these dishes significantly enhance business differentiation and profitability, operators face challenges such as ingredient sourcing, customer unfamiliarity, and maintaining cultural authenticity. The study underscores the critical role of strategic marketing, staff training, and community engagement in overcoming these obstacles. By presenting actionable insights, this research contributes to the broader discourse on sustainable culinary tourism and cultural preservation, offering a model of similar contexts within and beyond Nigeria.
