ABSTRACT
Vitamin A content and mineral composition of a selected plant seed (Treculla africna' were investigated. African Breadfruit (ABF) - Treculia Africana were procured and then processed into flour by boiling and sun-drying, roasting of dehulled, roasting of undehulled and the raw sample. All processing methods used were found to reduce the Vitamin content of the samples. Vitamin A content decreased significantly (P<O.05) from 2.237± 0.223 (i.p!100g) in raw sample to 1.634±0.003 (i.u/100g) in roasted undehulled sample. Calcium content was highest in roasted undehulled sample 7.350±1.161 (mg/bOg) and lowest in roasted dehulled sample 3.340±1.161 (mg/bOg). Processing did not result in any significant increase or decrease in calcium content of the samples. Boiling and sun-drying as well as roasting of dehulled sample resulted in a non-significant decrease in magnesium content of the sample. While roasting of undehulled sample significantly (P~0.05) increased the magnesium content from 2.00 ± 0.346 (mg/lOOg) in raw sample to 3.800 ± 0.346 (mg/bOg). There was a considerable decrease in Selenium, Copper and Iodine contents of processed sample. Roasted dehulled sample and roasted undehulled sample however, increased in selenium content. All processing methods resulted i n a significant decrease (P~0.05) in Iron, Selenium, Copper and Chromium contents of all the samples..
