ABSTRACT
Culture is the customs and beliefs,
art, way of life and social organization of a particular country or group.
Culture can also be said to he the beliefs and attitudes about something that
people in a particular group or organization share, (Hornby 2000). Cultural
food selection affects nutrition, sometimes negatively. Crabs, frogs, mushrooms
and even insects make tasty and nutritious dishes. They have the potential of
improving the nutrition of some societies but for cultural sentiments and
taboos, it is common knowledge that some religion forbids the consumption of
certain foods even when the foods are known to be excellent sources of major
nutrient. The less orthodox Hindus for example will have nothing to do with
bee! (custom and culture, 1987). 1".Jutrilionists know that vegetable
protein for instance is lower in quality than animal protein, some religion
forbid the consumption of some animals and some species of fish, (Oyenuga, 1
989).
