ABSTRACT
Animal foods furnish readily available nutrients in such proportions that are difficult to obtain from other foods. The most important of these nutrients is protein. Proteins are very important to the processes of life. They are the principal constituents of the organs and soft tissues of the body and a liberal and continuous supply is needed in the food throughout life for growth and repair.
