ABSTRACT

The antimicrobial activity of ethanol and hot water extracts of Dennettia tripetala (Pepper fruit), ;\./u1111dora myrislin, (i\frica11 11ut1111.!&}, Tetraplcuru 11.!lruplera (Ai<.lan trcl.!) and Aframumum melegueta (Alligator pepper). were investigated on some isolated food spoilage organisms; Salmonella specie, Escherichia coli and Staphylococcus aureus. The pattern of inhibition varied with the solvents used. 70% ethanol extract was more consistent than the hot water extract with the coefficient of variation of 22.41 against 27.59 of Denne Ilia tripetala on Eschericia coli. The extracts of Dennettia tripetala exhibited the highest activity against Salmonella specie with a zone of inhibition 27.?mm follo,w
