ABSTRACT


The study was designed to evaluate the nutritional value of Termitomyces robustus


and it was found to contain carbohydrate, fat, and protein, mineral and anti-

nutritional factors. Result of the proximate composition in percentage (%) were as


follows; carbohydrate (54.34±0.15), protein (33.76±0.28), moisture (14.25±0.08),

fibre (6.27±0.12) and fat (3.43±0.01). The mineral composition of the mushroom

in (mg/bOg) were as follows; potassium (2451.80±41.31), phosphorus

(604.03±8.66), magnesium (91.28±1.18), calcium (57.04±1.63), sodium

(35.38±1.60), iron (17.85±1.04), zinc (8.49±0.40), copper (3.35±0.19), manganese

(2.11±0.01) and selenium (0.12±0.00). The amino acid composition in (g/lOOg)

were as follows; glutamate (16.11±1.11), aspartate (9.03±1.03), leucine

(7.13±0.32), tyrosine (6.88±0.00), arginine (6.49±0.18), phenylalanine

(6.12±0.09), senne (5.84±0.33), valine (5.20±0.09), lysine (4.98±0.08), threonine

(4.81±0.19), isoleucine (4.77±0.05), proline (3.88±0.03), alanine (2.69±0.08),

glycine (2.30±0.10), histidine (2.23±0.04), methiomne (1.71±0.11), tryptophan

(1.35±0.10) and cysteine (1.15±0.06). The result of the anti-nutrient component

shows the presence of cyanogemc glycosides (8.89±0.05 mg/kg), tannins

(0.21±0.00%), trypsin inhibitor (8.00±1.00 pug) and oxalate (0.31±0.00%). The

energy content is (382.04 Kcallg). Hence, these nutrient contents revealed that

Term itomyces robustus is a low energy, health food and may also be used as a

protein supplementary diet.
