ABSTRACT

This research identified and evaluated the nutrient content of turmeric powder as spice. The proximate composition, minerals, vitamins and anti-nutrients composition of the turmeric powder showed that the crude protein content was 3.60%,fat 4.90 %, carbohydrate 66.73 %, Ash 1.3 %, non protein Nitrogen(NPN)0.024 %, crude fibre 2.24 %. Mineral composition were: magnesium 0.241mg, phosphorus 0.35mg,calcium 0.6mg,sodium 0.1 lmg,potassium 0.14mg. The vitamin content was: Vitamin A 160ti/dl,vitaminC 2 .Omg,niacin 0 .044mg,riboflavin 0.016mg,thiamin 0.030mg. The anti-nutrient contents were: phytate 0.45mg, oxalate 0.26mg, tannin 0.33mg. The use of turmeric powder as a spice is good for human health benefits S because it helps to cure some diseases.
