ABSTRACT

Cassava flour supplemented with African yam bean or Cray fish was studied, the supplements showed no significant difference in some but significant difference in protein, potassium and iron in the proximate and mineral analysis, when it was comp d with intermittent increase in cassava flour control and African Yam bean decrease. The nutrient contents increased much when Cray fish was added to it to when African yam bean was being added even in the minerals nutrient. This shows that the addition of crayfish to the fifth and sixth treatment enhances the production of a high nutrient values especially protein which will help in the alleviation of protein energy malnutrition.
