ABSTRACT

Equilibrium moisture content (EMC) of cocoyam varieties: Colocasia

esculenta; Xanthosoma sagiUifoiium, Cylosperma chamissonis, cocoyam

varieties were determined at 30°C by equilibrating dried chips over different

áoncnetration of sulphuric acid to give water activities of 0.05, 0.17, 0.26,

0.36. Response surface methodology (RSM) was adopted to investigate the

effect of size, variety, and treatment on the equilibrium moisture content of

dehydrated samples. The studies showed that EMC at 0.05A significantly

(p ~ 0.05) affected variety, size and variety had quadratic effect (P ~ 0.05) at

0.26A Size and treatment significantly (P~ 0.05) affected equillibriuni

moisture of dehydrated cocoyam chips at a 0.36
