ABSTRACT
This article modified and evaluate a dual heat source garri fryer using waste oil as a heat storage material. Based on the already existing machine, the new development we made were possible because there were provisions for the charcoal and waste oil pans, the paddling shaft was worked on because it was fastened with knots and bolts. During the frying process using gas as heatsource, the garri formed were dusty and have a final moisture content of 13.2, while the frying using waste oil wasted more time because the heat from charcoal concentrated on the oil first before it was evenly circulated and transferred from oil to the trough at the final moisture content of 13.5. Based on this experiment, the best heat source for frying the garri is charcoal because it was producing steady and generous heat that was heating directly to the trough and the grains were properly formed. The final moisture content was 12.5 which is the desired product sample.
