ABSTRACT

This study shows the anti-nutritional factors and amino acid profiles of selected accessions of African yam bean (Sphenostylis stenocarpa). As an underutilized legume with high nutritional potential, the African yam bean could contribute to food security, but its antinutritional compounds limit nutrient absorption. This research analyzes key anti-nutritional factors—tannins, phytates, and saponin, using standard biochemical techniques, while the amino acid profiles are assessed to determine the protein quality of the beans. The results reveal considerable variation among accessions, with some showing reduced levels of antinutritional factors and a more favorable amino acid composition. These findings highlight the potential of certain accessions for improving the nutritional quality of diets and promoting the wider use ofAfrican yam bean in Nigerian agriculture and food systems.
